Clubs and Points
Most shops offer some sort of incentive to shop with them. Some just send vouchers and some are points collected at the checkout.
Sainsburys have a club and also offer Nectar
Nectar itsself is fantastic and points can be collected from 100's of different retailers when going through the Nectar website. My favorite are Ebay, Play and Amazon.
Tesco have their Clubcard
Boots havetheir Parenting club for extra vouchers and Advantage points. These can also be collected through Treatstreet at different retailers such as Mothercare and Asos

Survey Sites / Product Testing
Tuluna - Complete surveys for points that you convert into vouchers. I have had a few vouchers for different shops and I actually won £2000 a couple of years ago in the prize draw.
Shop & Scan - You have to be 'invited' for this one. I registered a couple of years ago and have only just joined. I haven't had any vouchers yet, although I do have enough points.
Bzzagent - This is good for product testing. They send you the Bzz kit and depending on what it is, it is either vouchers or the product. And bacically you tell people about the product and share samples. I've had toothpaste, sweetner and recently ice cream.
